  • 2 dried ancho chiles, stemmed and seeded

  • 3 pounds chuck roast, cut into large chunks

  • 5 cloves garlic
  • 1 tablespoon apple cider vinegar
  • 1 chipotle pepper in adobo sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 2 bay leaves
  • 4 cups beef broth
  • Corn tortillas
  • Shredded mozzarella or Oaxaca cheese
  • Chopped onions and cilantro for garnish

Instructions

  1. Toast guajillo and ancho chiles in a dry skillet until fragrant. Soak in hot water for 15 minutes.
  2. Season beef with salt and pepper. Sear in oil until browned, then remove.
  3. In the same pot, sauté onion and garlic until soft. Add soaked chiles, vinegar, chipotle pepper, cumin, oregano, and cinnamon.
  4. Transfer to a blender with 1 cup beef broth and blend until smooth.
