  • 1 zucchini, diced
  • 1 red bell pepper, diced

  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, cooking until fragrant.
  3. Add zucchini and bell pepper, cooking until tender. Stir in the spinach and cook until wilted. Remove from heat.
