Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar (divided)
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 cups peeled and finely chopped apples
  • 1/2 tsp ground nutmeg
  • 2 tsp ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, 1 1/2 cups granulated sugar, and brown sugar until fluffy.
  3. Add eggs and vanilla extract; beat until combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to the wet mixture and mix until combined.
  6. Fold in chopped apples.
  7. In a small bowl, mix remaining 1/2 cup sugar with 2 tsp cinnamon.
  8. Scoop dough into balls and roll in cinnamon-sugar mixture.
  9. Place on prepared baking sheet, spacing about 2 inches apart.
  10. Bake for 12–14 minutes, or until edges are set and cookies are lightly golden.
  11. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
