Preheat oven to 400°F and line a baking sheet with parchment paper.
In a skillet over medium heat, cook the bacon until crispy. Remove and set aside.
In the same skillet, add the ground beef and onion. Cook until the beef is no longer pink. Drain any excess grease.
Stir in ketchup, mustard, salt, pepper, and cooked bacon. Remove from heat and let cool slightly.
Roll out the pizza dough and cut into 4 rectangles. Divide the beef mixture evenly between each.
Top with shredded cheese, fold over the dough, and crimp the edges to seal.
Place on baking sheet, brush with egg wash, and bake for 12-15 minutes or until golden brown.
Let cool slightly before serving.
