Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Finely chop the salmon or process it in a food processor until minced.
In a large bowl, mix the salmon, breadcrumbs, egg, parsley, Parmesan cheese, garlic, salt, pepper, olive oil, paprika, and lemon zest until well combined.
Form small meatballs and place them on the baking sheet.
Bake for 15-18 minutes or until golden brown and cooked through.
Serve with your favorite dipping sauce or over a salad.
