Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 2-inch pieces
  • 3 tbsp avocado oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 cup BBQ sauce (plus more for brushing)
  • 1/2 head romaine lettuce, chopped
  • 2 cups arugula
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1 avocado, diced
  • 1/4 red onion, thinly sliced
  • Cilantro, for garnish
  • Juice of 1 lime
  • Wooden skewers, soaked in water

Instructions

  1. In a large bowl, toss the chicken with avocado oil, salt, pepper, garlic powder, paprika, cumin, and BBQ sauce. Let marinate for at least 30 minutes.
  2. Thread the chicken onto skewers.
  3. Preheat grill to medium-high heat. Grill skewers for 8–10 minutes, turning occasionally and brushing with extra BBQ sauce until cooked through.
  4. In a large bowl or platter, layer romaine, arugula, tomatoes, cucumber, avocado, and red onion.
  5. Top with grilled chicken skewers, squeeze lime juice over the salad, and garnish with cilantro.
  6. Serve immediately with extra BBQ sauce on the side, if desired.
