Ingredients

  • 1 lb breakfast sausage
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • Salt and pepper, to taste
  • 1 refrigerated pie crust (or homemade)
  • 5 large eggs
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the sausage until browned. Remove and set aside.
  3. In the same skillet, melt butter, then whisk in flour to form a roux.
  4. Slowly add milk while whisking, cooking until thickened. Season with salt and pepper.
  5. Return sausage to skillet and mix with gravy. Remove from heat.
  6. Unroll pie crust and place into a 9-inch pie dish. Press down and trim edges.
  7. Crack eggs into a bowl and whisk lightly. Pour over sausage mixture and gently stir.
  8. Top with shredded cheese and bake for 30-35 minutes until golden and set.
  9. Let cool for 5 minutes before slicing. Garnish with parsley if desired.
