Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook the sausage until browned. Remove and set aside.
In the same skillet, melt butter, then whisk in flour to form a roux.
Slowly add milk while whisking, cooking until thickened. Season with salt and pepper.
Return sausage to skillet and mix with gravy. Remove from heat.
Unroll pie crust and place into a 9-inch pie dish. Press down and trim edges.
Crack eggs into a bowl and whisk lightly. Pour over sausage mixture and gently stir.
Top with shredded cheese and bake for 30-35 minutes until golden and set.
Let cool for 5 minutes before slicing. Garnish with parsley if desired.
