Ingredients

  • 2 packs (16 oz each) grated cassava, thawed
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 1/2 cup granulated sugar
  • 1 jar (12 oz) macapuno string, drained
  • 2 eggs, beaten
  • 1/2 cup evaporated milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine grated cassava, condensed milk, coconut milk, sugar, beaten eggs, and vanilla. Mix until well blended.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Bake for 45–50 minutes or until set and the edges are golden.
  5. Remove from oven and pour evaporated milk over the top, then spread macapuno strings evenly.
  6. Return to oven and bake for another 15–20 minutes until the topping is bubbly and slightly golden.
  7. Let it cool completely before slicing. Serve warm or chilled.
