Spoon the mixture onto tortillas, roll them up tightly, and place seam-side down on the baking sheet.
Lightly spray taquitos with olive oil and bake for 15–20 minutes or until golden and crispy.
Meanwhile, prepare the avocado lime crema by blending avocado, Greek yogurt (or sour cream), lime juice, cilantro, and salt until smooth.
Serve taquitos warm with avocado lime crema on the side or drizzled over top.
