Ingredients

  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 egg
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped chives
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup grated Parmesan cheese
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin with non-stick spray.
  2. In a bowl, mix mashed potatoes, cheddar cheese, sour cream, egg, garlic powder, salt, and pepper.
  3. Scoop the mixture into the muffin tin, pressing slightly to form a cup shape.
  4. Top each with crumbled bacon and Parmesan cheese.
  5. Bake for 20-25 minutes, until golden brown and crispy on the edges.
  6. Let cool slightly, then remove from the tin and garnish with chives before serving.
