Ingredients

  • 1 1/2 lbs fresh salmon, cut into cubes
  • 1/2 cup chimichurri sauce (plus extra for serving)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon, sliced
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat grill to medium-high heat.
  2. In a large bowl, toss salmon cubes with olive oil, salt, pepper, and half the chimichurri sauce.
  3. Thread salmon pieces and lemon slices alternately onto skewers.
  4. Grill skewers for 2-3 minutes per side, until salmon is just cooked through.
  5. Remove from grill and drizzle with remaining chimichurri sauce before serving.
