Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
Add in eggs, vanilla extract, and strawberry extract, mixing until combined.
Gradually stir in flour, baking soda, and salt. Mix until a dough forms.
Add food coloring if using, and stir in mini chocolate chips.
Scoop dough into tablespoon-sized balls and place on prepared baking sheets.
Bake for 10-12 minutes or until edges are just turning golden. Cool completely.
Once cooled, melt chocolate in a microwave-safe bowl in 20-second intervals, stirring until smooth.
Dip half of each cookie into the melted chocolate and place on parchment to set.
Add sprinkles if desired and let the chocolate harden before serving.
