Ingredients

  • 1 pound ground beef
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add sliced smoked sausage and chopped onion to the pot. Cook for about 5 minutes, until the onions are softened.
  3. Stir in garlic and cook for another 1 minute.
  4. Add potatoes, beans, corn, diced tomatoes, Rotel, tomato sauce, and beef broth. Stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 30-35 minutes, or until the potatoes are tender.
  6. Season with salt and pepper to taste. Serve hot and enjoy!
