Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 8 oz fettuccine pasta
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. Slice the chicken breasts into thin strips and season with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium heat and cook the chicken until golden brown. Remove from the pan and set aside.
  4. In the same skillet, add the garlic and bell peppers, cooking until softened.
  5. Pour in the chicken broth and heavy cream, stirring to combine.
  6. Add the Parmesan cheese and let the sauce simmer until thickened.
  7. Return the cooked chicken to the skillet and toss with the sauce.
  8. Add the cooked pasta, tossing everything together until well coated.
  9. Serve hot, garnished with chopped parsley.
