In a bowl, combine ground pork, chopped shrimp, scallions, egg, soy sauce, sesame oil, salt, and white pepper.
Mix thoroughly until the filling is well combined.
Place a small spoonful of filling in the center of a wonton wrapper.
Dip your finger in water and moisten the edges of the wrapper.
Fold the wrapper into a triangle and press to seal tightly, removing any air.
Heat oil in a deep fryer or deep skillet to 350°F (175°C).
Fry the wontons in batches until golden brown and crispy, about 2-3 minutes.
Remove and drain on paper towels.
Serve with sweet chili sauce or your favorite dipping sauce.
