Ingredients

  • 2 cups cold mashed potatoes
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil, for frying

Instructions

  1. In a large bowl, mix together the mashed potatoes, eggs, flour, Parmesan, chives, salt, and pepper until well combined.
  2. Heat the oil in a large nonstick skillet over medium heat.
  3. Scoop about 1/4 cup of the potato mixture per pancake into the skillet and flatten slightly with a spatula.
  4. Cook for 3-4 minutes on each side or until golden brown and crisp.
  5. Transfer to a paper towel-lined plate and keep warm while you cook the remaining pancakes.
  6. Serve hot with sour cream, applesauce, or your favorite dipping sauce.
