Preheat your oven to 375°F (190°C).
In a skillet over medium heat, cook the ground beef until browned, then drain excess grease.
Stir in the taco seasoning and 1/4 cup of water, simmering for 5 minutes.
Spread a small amount of enchilada sauce in the bottom of a baking dish.
Fill each tortilla with seasoned beef, roll tightly, and place seam-side down in the dish.
Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
Bake for 20 minutes or until the cheese is melted and bubbly.
