Preheat your oven to 400°F (200°C).
Pat the pork chops dry with paper towels and season with salt, pepper, garlic powder, and paprika.
Heat olive oil in a large oven-safe skillet over medium-high heat.
Sear pork chops for 2-3 minutes per side until golden brown.
Sprinkle brown sugar over the top of each pork chop.
Transfer the skillet to the oven and bake for 8-10 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
Let rest for a few minutes before serving. Garnish with fresh herbs if desired.
