Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the carrot sticks on the prepared baking sheet.
In a small bowl, mix together melted butter, honey, salt, pepper, and garlic powder.
Pour the honey butter mixture over the carrots and toss to coat evenly.
Spread the carrots into an even layer and roast for 25–30 minutes, or until tender and slightly caramelized, stirring once halfway through.
Garnish with chopped parsley if desired and serve warm.
