Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon erythritol or preferred sweetener
  • 1/2 teaspoon vanilla extract
  • Optional toppings: fresh berries, coconut flakes, nuts

Instructions

  1. In a medium bowl, whisk together the almond milk, cocoa powder, sweetener, and vanilla extract until well combined.
  2. Add chia seeds and stir thoroughly to avoid clumping.
  3. Let the mixture sit for 10 minutes, then stir again.
  4. Cover and refrigerate for at least 2 hours or overnight until thickened.
