Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 tablespoons lemon zest (about 2 lemons)
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered sugar
  • 2–3 tablespoons fresh lemon juice

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, beat butter, sugar, and lemon zest until light and fluffy.
  3. Gradually mix in flour and salt until a soft dough forms.
  4. Roll dough out on a floured surface and cut into desired shapes.
  5. Place cookies on the prepared sheet and bake for 11–13 minutes or until edges are just golden.
  6. Cool completely before glazing.
  7. For the glaze, whisk powdered sugar with lemon juice until smooth. Dip or drizzle over cookies and let set.
