Ingredients

  • 1.5 lbs baby potatoes (red or yellow), halved
  • 1/2 cup salted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon freshly chopped parsley
  • 1 tablespoon freshly chopped chives
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix melted butter, garlic, Dijon mustard, lemon juice, parsley, chives, red pepper flakes, paprika, salt, and pepper.
  3. Add halved baby potatoes and toss until fully coated.
  4. Spread potatoes evenly on the prepared baking sheet, cut side down.
  5. Bake for 25-30 minutes or until golden and tender, flipping halfway through if desired.
  6. Serve warm, drizzled with any remaining cowboy butter sauce from the bowl.
