Add halved baby potatoes and toss until fully coated.
Spread potatoes evenly on the prepared baking sheet, cut side down.
Bake for 25-30 minutes or until golden and tender, flipping halfway through if desired.
Serve warm, drizzled with any remaining cowboy butter sauce from the bowl.
