In a bowl, mix the soy sauce, sesame oil, rice vinegar, and maple syrup.
Add the tofu cubes and toss gently to coat. Let it marinate for 10–15 minutes.
In a serving bowl, layer the rice as a base.
Top with the marinated tofu, avocado, spring onion, chili (if using), edamame, cucumber, sesame seeds, and coriander.
Drizzle any remaining marinade over the bowl before serving.
