Ingredients

  • 1 tbsp light soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1 tsp maple syrup
  • 100g firm tofu, diced
  • ½ ripe avocado, sliced
  • 50g cooked and cooled brown rice
  • 1 spring onion, thinly sliced
  • ¼ red chili, finely chopped (optional)
  • 1 tbsp edamame beans
  • ½ small cucumber, thinly sliced
  • 1 tsp sesame seeds
  • Small handful of fresh coriander (cilantro)

Instructions

  1. In a bowl, mix the soy sauce, sesame oil, rice vinegar, and maple syrup.
  2. Add the tofu cubes and toss gently to coat. Let it marinate for 10–15 minutes.
  3. In a serving bowl, layer the rice as a base.
  4. Top with the marinated tofu, avocado, spring onion, chili (if using), edamame, cucumber, sesame seeds, and coriander.
  5. Drizzle any remaining marinade over the bowl before serving.
