Ingredients

  • 1 1/2 cups warm water (110°F)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 2/3 cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large bowl, dissolve the yeast in warm water. Let sit for 5 minutes until foamy.
  2. Stir in salt and sugar until dissolved. Gradually add the flour and stir until a dough forms.
  3. Knead dough on a floured surface for 5 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  5. Preheat oven to 425°F. Line two baking sheets with parchment paper.
  6. Bring a large pot of water to a boil. Add baking soda carefully (it will foam up).
  7. Divide dough into 6 pieces. Roll each into a rope and cut into 1-inch bites.
  8. Working in batches, boil pretzel bites for 30 seconds. Remove with a slotted spoon and place on baking sheet.
  9. Brush with beaten egg and sprinkle with coarse salt.
  10. Bake for 12-15 minutes or until golden brown. Let cool slightly before serving.
