Ingredients

  • 2 pounds carrots, peeled and cut into 3-inch sticks
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with foil or parchment paper.
  2. Place the carrots on the prepared baking sheet and drizzle with olive oil.
  3. Add minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Spread carrots out in a single layer and roast for 25-30 minutes or until tender and golden.
  5. Garnish with chopped parsley if desired and serve warm.
