Heat the olive oil in a large sauté pan over medium heat.
Add the sliced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
Add the spinach to the pan. Use tongs to toss it with the garlic and oil until wilted, about 2-3 minutes.
Season with kosher salt and freshly ground black pepper to taste.
Remove from heat and serve immediately, with a squeeze of lemon juice if desired.
