Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice (dairy or plant-based)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup pumpkin puree
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Toppings: chopped pecans, pumpkin seeds, granola, or more maple syrup

Instructions

  1. In a mason jar or bowl, combine oats, milk, yogurt, pumpkin puree, chia seeds, maple syrup, spices, vanilla, and salt.
  2. Stir well until fully combined.
  3. Cover and refrigerate overnight or for at least 6 hours.
  4. In the morning, stir again and add your favorite toppings before serving.
