Ingredients

  • 4 medium beets, washed and trimmed
  • 2 tablespoons olive oil, divided
  • Salt and pepper to taste
  • 5 oz mixed greens
  • 1/4 red onion, thinly sliced
  • 1/4 cup candied pecans
  • 1/4 cup crumbled goat cheese
  • 2 tablespoons balsamic glaze

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Drizzle the beets with 1 tablespoon olive oil and season with salt and pepper.
  3. Wrap each beet in foil and place on the baking sheet. Roast for 45-50 minutes or until fork-tender.
  4. Let the beets cool slightly, then peel and cut into wedges.
  5. In a large bowl, arrange the mixed greens. Top with red onion slices, beet wedges, pecans, and goat cheese.
  6. Drizzle with remaining olive oil and balsamic glaze before serving.
