Ingredients

  • 2 tablespoons olive oil
  • 14 oz smoked sausage, sliced
  • 1 small head of broccoli, cut into florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced into half-moons
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced sausage and cook until browned, about 4-5 minutes. Remove and set aside.
  3. In the same skillet, add broccoli and 2 tablespoons of water. Cover and steam for 3-4 minutes.
  4. Add bell peppers and zucchini to the skillet. Sauté until tender, about 5-6 minutes.
  5. Return the sausage to the skillet, add Italian seasoning, salt, and pepper.
  6. Stir everything together and cook for an additional 2-3 minutes until heated through.
  7. Serve hot.
