Ingredients

  • 8 slices sandwich bread (soft white or wheat)
  • 8 breakfast sausage links (fully cooked)
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • Butter for greasing pan
  • Maple syrup for serving

Instructions

  1. Flatten each slice of bread with a rolling pin.
  2. Place a sausage link at the edge of each slice and roll it up tightly.
  3. In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla.
  4. Dip each roll-up in the egg mixture until coated.
  5. Heat a buttered skillet over medium heat and cook roll-ups, turning until all sides are golden brown.
  6. Serve warm with maple syrup.
