Ingredients

  • 1 pound cooked shrimp, peeled and deveined
  • 1 1/2 cups cooked couscous
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, combine cooked couscous, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper.
  3. Pour dressing over the couscous mixture and toss gently to combine.
  4. Add shrimp and mix until everything is evenly coated.
  5. Chill for at least 20 minutes before serving for best flavor.
