Ingredients

  • ⅓ cup butter, softened
  • ¼ cup granulated erythritol or sweetener of choice
  • 1 egg, large
  • ½ tsp vanilla extract
  • ⅔ cup coconut flour
  • ¼ tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream the softened butter and sweetener together until smooth and fluffy.
  3. Mix in the egg and vanilla extract until fully combined.
  4. Stir in coconut flour and baking powder until a dough forms. Let the dough sit for a few minutes to thicken.
  5. Form 8 small balls, flatten slightly, and place them on the baking sheet.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Cool completely before serving.
