Preheat your oven to 400°F (200°C).
In a small bowl, mix all the spices together.
Rub the spice mixture evenly over the chicken pieces.
Mix the oil with liquid smoke (if using) and brush it over the chicken.
Place chicken pieces skin-side up in a roasting pan or baking dish.
Add water to the bottom of the pan (don’t pour over the chicken).
Cover with foil and roast for 30 minutes.
Remove foil and continue roasting for another 20–30 minutes, or until chicken is crispy and cooked through (internal temp should be 165°F).
Let rest for 5 minutes before serving.
