Preheat oven to 350°F (175°C).
Spread bread cubes on baking sheets and bake for 5-10 minutes until lightly crisp.
In a large skillet over medium heat, melt butter. Add onion and celery and cook until tender, about 5 minutes.
Remove from heat and stir in poultry seasoning, salt, and pepper.
Place toasted bread cubes in a large bowl. Pour the butter mixture over the bread and toss to coat.
Gradually add chicken broth, stirring gently until desired moistness is achieved.
Transfer stuffing to a greased baking dish. Cover with foil and bake for 30 minutes.
Uncover and bake an additional 15 minutes until top is golden.
