Ingredients

  • 6 large eggs
  • 1/4 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 1/2 cups Mexican cheese blend, shredded
  • 1/2 cup chopped ham or cooked bacon
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 4-5 fajita-sized flour tortillas, quartered
  • Cooking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray.
  2. In a large bowl, whisk together the eggs, heavy cream, garlic powder, onion powder, salt, and pepper.
  3. Stir in 1 cup of shredded cheese, ham or bacon, bell peppers, and green onions.
  4. Add the quartered tortillas into the mixture and stir until well combined.
  5. Pour the mixture into the prepared baking dish and top with the remaining 1/2 cup of cheese.
  6. Bake uncovered for 30-35 minutes or until the eggs are fully set and the top is golden and bubbly.
  7. Let it cool slightly before slicing. Serve warm!
