In a large bowl, combine olive oil, vinegar, adobo, sazon, garlic, oregano, cumin, and smoked paprika.
Add chicken to the marinade and mix until fully coated. Cover and refrigerate for at least 2 hours or overnight.
Preheat grill to medium-high heat. Thread chicken pieces onto soaked skewers.
Grill skewers for about 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred.
Serve hot with your favorite dipping sauce or sides.
