Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through, about 6-8 minutes.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add bell peppers, zucchini, squash, onion, and garlic. Sauté until vegetables are tender-crisp, about 5 minutes.
  5. Return chicken to the skillet and stir to combine with vegetables.
  6. Garnish with fresh parsley before serving.
