Ingredients

  • 2 chicken breasts, cubed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup cooked white rice (or rice of choice)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce
  • 1/4 cup hummus (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. In a bowl, toss chicken with olive oil, garlic powder, onion powder, oregano, salt, and pepper.
  2. Cook chicken in a skillet over medium heat for 6-8 minutes until browned and cooked through.
  3. Assemble bowls with a base of rice, topped with cooked chicken, tomatoes, cucumber, red onion, feta, tzatziki, and hummus if using.
  4. Garnish with chopped parsley and serve immediately.
