Ingredients

  • 2 large eggs
  • 1/2 cup granulated sugar
  • 3/4 cup all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/4 cup milk
  • 1 tablespoon unsalted butter, melted
  • 1/2 cup strawberry or raspberry jam
  • 1 cup desiccated coconut

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a muffin pan.
  2. Beat eggs and sugar together until light and fluffy.
  3. Gently fold in sifted flour and baking powder.
  4. Add milk and melted butter, mixing just until combined.
  5. Spoon batter into muffin cups, filling halfway, and bake for 10–12 minutes.
  6. Let cakes cool completely, then slice in half horizontally.
  7. Spread jam on the bottom half, place the top back on, then roll the cake in more jam to coat the outside lightly.
  8. Roll each cake in coconut until fully covered.
  9. Serve and enjoy!
