Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 2 tablespoons honey
  • 1/2 cup fresh cilantro, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, whisk together olive oil, lime juice, lime zest, honey, cilantro, garlic, cumin, paprika, salt, and pepper.
  2. Add the chicken thighs to the bowl and toss to coat evenly. Marinate for at least 30 minutes or up to 8 hours in the fridge.
  3. Preheat a grill or skillet over medium-high heat.
  4. Remove chicken from marinade and cook for 5-6 minutes per side, or until internal temperature reaches 165°F.
  5. Let rest for a few minutes before serving. Garnish with extra cilantro and lime wedges if desired.
