Ingredients

  • 3 ripe mangos, peeled, pitted, and diced
  • 1 red bell pepper, diced
  • 1/2 small red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. In a medium bowl, combine the diced mango, red bell pepper, red onion, and jalapeño.
  2. Add the chopped cilantro and squeeze in the fresh lime juice.
  3. Season with salt to taste and mix everything gently to combine.
  4. Chill in the fridge for 15–30 minutes before serving to let the flavors meld.
  5. Serve with chips, over grilled chicken, or as a topping for tacos.
