Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1/2 cup heavy cream
  • 8 oz dry pasta (penne or rotini)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced sausage and cook until browned.
  3. Stir in the chopped onion and garlic; sauté until translucent.
  4. Pour in chicken broth, diced tomatoes with chilies, and heavy cream.
  5. Add uncooked pasta, salt, and pepper. Stir well to combine.
  6. Bring to a boil, then reduce heat and simmer for 12-15 minutes or until pasta is tender.
  7. Stir in shredded cheese until melted and creamy.
  8. Garnish with fresh parsley and serve hot.
