Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, mix the maple syrup, pineapple juice, vanilla extract, and sunflower oil.
Pour the wet ingredients into the dry ingredients and stir until well combined into a dough.
Scoop tablespoon-sized portions of the dough onto the prepared baking sheet.
Flatten each cookie slightly with the back of a spoon.
Bake for 10-12 minutes or until the edges are lightly golden.
Remove from oven and allow to cool on a wire rack.
