Ingredients

  • 1 oz limoncello
  • 2 oz pineapple juice
  • 3 oz prosecco
  • 1 splash club soda
  • Pineapple wedge, for garnish
  • Fresh mint leaves, optional

Instructions

  1. In a wine glass or champagne flute, pour in the limoncello and pineapple juice.
  2. Top with chilled prosecco and a splash of club soda.
  3. Gently stir to combine.
  4. Garnish with a pineapple wedge and a mint leaf if desired.
  5. Serve immediately and enjoy cold.

Notes

For a sweeter version, use sparkling Moscato instead of prosecco. You can also freeze pineapple chunks and use them as fruity ice cubes.
