Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/3 cup pumpkin purée
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup mini chocolate chips
  • 3 graham cracker sheets, broken into small pieces
  • 1/2 cup mini marshmallows, plus extra for topping

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in the pumpkin purée and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  5. Gradually add dry ingredients to wet ingredients and mix until a soft dough forms.
  6. Fold in chocolate chips, graham cracker pieces, and marshmallows.
  7. Scoop dough onto the prepared baking sheet using a cookie scoop, spacing 2 inches apart.
  8. Top each dough ball with extra marshmallows for a gooey finish.
  9. Bake for 10-12 minutes or until edges are golden brown and centers are set.
  10. Cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
