Ingredients

  • 4 small yellow squash, sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • ¾ teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss the sliced squash with olive oil, garlic powder, salt, and pepper until evenly coated.
  3. Spread the squash in a single layer on the prepared baking sheet. Avoid overcrowding.
  4. Roast in the oven for 20-25 minutes, flipping once halfway through, until tender and lightly golden.
  5. Sprinkle with Parmesan cheese if desired, and serve warm.
