Bring pork chops to room temperature, then pat them dry with paper towels.
Generously season both sides with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Once hot, sear the pork chops for 3-4 minutes on one side.
Flip the chops, reduce heat to medium, and add butter, rosemary, and garlic.
Baste the pork chops with the melted butter and cook another 3-5 minutes, or until internal temp reaches 145°F.
Let the chops rest a few minutes before serving with the garlic rosemary butter spooned over.
