Ingredients

  • 4 salmon fillets
  • 2 tbsp melted butter
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1 lb asparagus, trimmed
  • 1 cup cherry tomatoes, halved

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together melted butter, olive oil, minced garlic, salt, pepper, paprika, oregano, and red pepper flakes.
  3. Place salmon fillets on the prepared baking sheet and brush them generously with the butter mixture.
  4. Arrange asparagus and cherry tomatoes around the salmon, drizzling them with any remaining butter mixture.
  5. Lay lemon slices over the salmon fillets.
  6. Bake for 12-15 minutes, or until salmon flakes easily with a fork.
  7. Serve warm and enjoy!
