Preheat the oven to 350°F (175°C).
In a small bowl, toss the diced strawberries with honey, vanilla extract, and lemon juice. Place them into a ramekin.
In another bowl, mix oats, flour, brown sugar, cinnamon, and salt.
Add the cold butter and mix with your fingertips until crumbly.
Sprinkle the crumble topping over the strawberries.
Bake for 20–25 minutes or until golden and bubbly.
Let cool slightly before enjoying.
