Ingredients

  • 2 lbs ground beef
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz) kidney beans, drained and rinsed
  • 2 cans (15 oz) pinto beans, drained and rinsed
  • 2 cans (15 oz) diced tomatoes, undrained
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) tomato sauce
  • 1 cup beef broth
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp cayenne pepper (optional)

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the diced onion and garlic to the skillet and sauté for 2–3 minutes until fragrant.
  3. Transfer the beef mixture to the crockpot.
  4. Add all remaining ingredients and stir well to combine.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  6. Serve hot with your favorite toppings like shredded cheese, sour cream, or chopped green onions.
